Instructions

    Cube 1.5 lb chicken thighs. Heat 4 tablespoons ghee in wok over high heat. Brown chicken in batches.

    In same pot, add 2 tablespoons ginger-garlic paste. Cook 1 min.

    Add 4 chopped tomatoes + 6 chopped green chilies (this version is hotter), 1 tablespoon coriander seeds crushed, 1 tablespoon cumin seeds crushed, 2 teaspoons red chili powder, 1 teaspoon turmeric, 2 teaspoons salt, 1 tablespoon kasoori methi.

    Return chicken. Add ½ cup water. Cover, simmer 20 min until tender.

    Bhuna (cook-down): uncover, increase heat, cook 10 min stirring until masala thickens and oil separates.

    Finish with grated fresh ginger, 2 more chopped green chilies, chopped cilantro, butter drizzle. Serve with naan and rice.
