Press 14 oz extra-firm tofu: wrap in towels, weight, press 30 minutes. Cube into 1-inch pieces.

Toss tofu with 2 tablespoons cornstarch. Heat 3 tablespoons oil in a wok over high heat. Pan-fry tofu in single layer for 8-10 minutes, turning to crisp all sides. Remove.

Whisk sauce: 3 tablespoons soy sauce, 2 tablespoons hoisin, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, 1 teaspoon sesame oil, Β½ cup vegetable stock, 1 tablespoon cornstarch + 2 tablespoons cold water.

In the same wok, add another tablespoon oil. Stir-fry 3 cups mixed vegetables (broccoli, bell pepper, snap peas, mushrooms) for 3 minutes.

Add 4 minced garlic cloves and 1 tablespoon grated ginger. Stir 30 seconds. Return tofu. Pour sauce. Toss for 60 seconds.
