Cook 1 lb fettuccine 1 min less than package. Reserve 1 cup pasta water.

Season 1 lb large shrimp with salt, pepper, paprika. Heat 2 tablespoons butter in skillet. Sauté shrimp 2 min per side until pink. Set aside.

In same skillet, melt ½ cup butter. Add 1 cup heavy cream. Simmer 2-3 min until slightly thickened.

Off heat, whisk in 1.5 cups freshly grated Parmesan in handfuls. Season with nutmeg, salt, pepper.
