Sauté drained cabbage and carrots with 1 cup sliced mushrooms, ½ cup bean sprouts, 4 minced garlic cloves, 1 tablespoon grated ginger in 1 tablespoon oil for 3-4 minutes. Season with 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, ½ teaspoon white pepper. Cool completely.

Working with one spring roll wrapper at a time, spoon 2 tablespoons of cool filling onto the lower third.

💡 Expert Tips

  • 1.Salt and drain cabbage.
  • 2.Cool filling completely.
  • 3.Roll tightly.
  • 4.Oil at 350°F.

🔬 Why It Works

Spring rolls succeed when filling is moist-but-not-wet, well-seasoned, and rolled tightly in wrapper that fries to shatter-crisp. The cabbage salt-and-drain reduces water content while keeping crisp. The 350°F oil creates the steam barrier for proper crisping.

Frequently Asked Questions

Bake or air-fry?
Bake at 400°F for 18 min, sprayed with oil. Air fry at 380°F for 12 min.
