Slice 3 cups cabbage and 1 cup carrots into thin matchsticks. Salt and drain 30 min. Squeeze dry.

Sauté drained cabbage and carrots with 1 cup sliced mushrooms, ½ cup bean sprouts, 4 minced garlic cloves, 1 tablespoon grated ginger in 1 tablespoon oil for 3-4 minutes. Season with 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, ½ teaspoon white pepper. Cool completely.

Working with one spring roll wrapper at a time, spoon 2 tablespoons of cool filling onto the lower third.

Fold bottom over filling, fold both sides in, roll tightly. Seal seam with beaten egg.

Heat 3 inches of oil to 350°F. Fry 4-5 at a time for 4 minutes, turning, until deep golden.
