Instructions

    Freeze 1.5 lb of ribeye or sirloin for 30 minutes — easier to slice thin. Slice as thin as possible against the grain.

    Heat 2 tablespoons oil in a large flat griddle or skillet over high heat. Sauté 1 sliced onion and 1 sliced bell pepper for 5 minutes until softened and charred. Push to one side.

    Add the sliced beef to the empty side. Season with salt and pepper. Cook 90 seconds, stirring and chopping with two spatulas to break up. Mix with onions and peppers.
