💡 Expert Tips
- 1.Blanch and shock spinach. Bright green.
- 2.Smooth puree.
- 3.Don't overcook paneer.
- 4.Kasoori methi at end.
🔬 Why It Works
Saag paneer succeeds because the blanch-shock method preserves the bright green color of spinach. The smooth puree creates the proper sauce texture. Cream balances the earthy spinach.
