Instructions

    Cook 1 lb pasta (fettuccine or pappardelle) for 1 minute less than package time. Reserve 1 cup pasta water before draining.

    Heat 2 tablespoons butter + 1 tablespoon olive oil in a large skillet over high heat. Add 1 lb sliced mushrooms (cremini or mixed). Don't move for 4 minutes — let them brown deeply. Stir, cook 3 more minutes.

    Add 4 minced garlic cloves and ½ teaspoon red pepper flakes. Cook 30 seconds.

    Add ¼ cup of dry white wine (or chicken/vegetable stock). Cook 2 minutes to reduce.

    Stir in 1 cup of heavy cream and ½ cup of grated Parmesan. Simmer 2 minutes until slightly thickened.
