Make the filling: in a bowl, beat 8 oz of softened cream cheese with 1 cup of shredded sharp cheddar, 2 chopped scallions, 1 teaspoon garlic powder, ½ teaspoon black pepper, ½ teaspoon salt, ½ teaspoon paprika.

Stuff each jalapeño half with about 1 tablespoon of filling. Smooth the top with a spoon.

Wrap each stuffed jalapeño with half a strip of bacon (12 strips, cut in half = 24 half-strips). Secure with a toothpick if needed.
