  • Celery1
  • Onion1 medium
  • Garlic3 cloves
  • Black Pepper0.5 tsp
  • Bay Leaves1
  • Olive Oil2 tbsp
  • Salt1 tsp

Instructions

    Make broth: simmer 1 whole chicken (4 lb) with 1 onion, 3 carrots, 3 celery, garlic, bay leaf, peppercorns, salt in 10 cups water for 1.5 hours.

    Remove chicken, cool, shred. Strain broth (discard vegetables from the broth-making stage).

    Return broth to pot. Add 3 chopped carrots, 3 chopped celery, 1 chopped onion. Simmer 15 min.

    Add 2 cups egg noodles (or skip for lighter version). Cook 8 min.

    Return shredded chicken. Add 2 teaspoons dried thyme, 1 teaspoon dried dill, 1.5 teaspoons salt, ½ teaspoon black pepper.

    Finish with juice of 1 lemon, ¼ cup chopped fresh parsley. Serve with crusty bread. Excellent for colds.
