Instructions

Use 4 cups cooked day-old rice. Break up clumps.

Cube 1 lb chicken thighs. Season with salt, pepper, 1 teaspoon soy sauce.

Heat 2 tablespoons oil in wok over highest heat. Cook chicken 4-5 min until done. Set aside.

Add 1 tablespoon oil. Scramble 3 beaten eggs. Push to side. Add 1 cup peas-carrots mix. Stir 2 min. Add 4 minced garlic cloves, 1 tablespoon ginger.

Add rice. Toss constantly 3 minutes until heated and starting to brown. Return chicken.

Drizzle 3 tablespoons soy + 1 teaspoon sesame oil + ½ teaspoon white pepper around rim. Toss. Add chopped scallions. Serve immediately.
