🔬 Why It Works

Egg fried noodles succeed with high heat (wok hei flavor), proper noodle prep (slightly undercooked, oil-tossed), and quick assembly. The egg provides protein; the vegetables provide variety; the sauce ties everything together.

Frequently Asked Questions

Add protein?
Yes — diced chicken, shrimp, or ham added after garlic.
Best noodles?
Chinese egg noodles (lo mein style). Italian spaghetti in a pinch.
Why soggy?
Overcooked noodles, low heat, too much sauce.
Vegetarian?
Skip oyster sauce or use mushroom version. Egg makes it vegetarian.
