Boil 8 oz egg noodles for 1 minute less than package time. Drain and toss with 1 teaspoon sesame oil.

Heat 2 tablespoons oil in a wok over highest heat. Add 3 beaten eggs, stir for 30 seconds until soft curds form. Push to one side.

Add 2 cups mixed vegetables (cabbage, carrots, bell pepper, scallions). Stir-fry 3 minutes.

Add 3 minced garlic cloves and 1 tablespoon grated ginger. Stir 30 seconds.

Add the noodles. Drizzle 3 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, ½ teaspoon white pepper around the rim. Toss 90 seconds.
