    Make filling: 1 lb ground pork + 2 cups finely chopped Napa cabbage (salted, drained 30 min, squeezed) + 4 scallions + 2 minced garlic + 2 tablespoons grated ginger + 2 tablespoons soy + 1 tablespoon sesame oil + 1 teaspoon sugar + 1 teaspoon white pepper + 1 beaten egg.

    Mix vigorously in one direction with chopsticks for 2 min. Develops bouncy texture.

    Place 1 teaspoon filling in dumpling wrapper. Brush edge with water. Fold and pleat.
