Pound 2 chicken breasts to ½-inch thickness. Marinate 30 minutes: 2 tablespoons olive oil, 1 tablespoon Italian seasoning, 2 minced garlic cloves, 1 teaspoon paprika, 1 teaspoon salt, ½ teaspoon black pepper, juice of half a lemon.

Heat 1 tablespoon oil in a skillet over medium-high. Cook the chicken 4-5 minutes per side until 165°F internal. Rest 3 minutes, then slice thinly against the grain.

Slice 1 long sub roll (or 2 hoagie rolls) in half horizontally but not all the way through. Hollow out a bit of bread to make room for fillings.

Toast the roll cut-side up under broiler for 60-90 seconds until golden. Drizzle the inside with 1 tablespoon olive oil and 1 teaspoon red wine vinegar.

Layer the bottom: 3 slices of provolone, the sliced chicken, sprinkle with dried oregano. Top with shredded lettuce, sliced tomato (salted), thin red onion slices, sliced pickles, banana peppers.
