Instructions

    Make samosa dough: 2 cups flour + 1 teaspoon ajwain + ½ teaspoon salt + ¼ cup oil. Add water gradually to make stiff dough. Rest 30 min.

    Make filling: cook 1 lb ground chicken with 1 chopped onion, 4 minced garlic, 1 tablespoon grated ginger, 1 chopped green chili, 1 teaspoon cumin, 1 teaspoon coriander, ½ teaspoon turmeric, 1 teaspoon garam masala, 1.5 teaspoons salt, ¼ cup chopped cilantro. Cool.

    Divide dough into 12 balls. Roll each into 5-inch circle. Cut in half (each half makes 1 samosa).

    Form cone with half-circle (seal straight edges with water). Fill cone with 1 tablespoon chicken filling. Seal top edge.
