Instructions

    Marinate 1.5 lb chicken thighs 30 min in yogurt-spice mixture (½ cup yogurt + 1 tablespoon ginger-garlic + 2 teaspoons each cumin, coriander, turmeric, red chili, garam masala + salt).

    Heat 3 tablespoons ghee in pressure cooker. Add whole spices (cardamom, cloves, cinnamon, bay leaf). Add 2 sliced onions, cook until golden.

    Add marinated chicken. Cook 5 min.

    Add 1 chopped tomato + 2 cups basmati rice (rinsed and soaked 30 min, drained) + 3.5 cups water + 1.5 teaspoons salt + saffron-milk.

    Pressure cook 6 minutes with natural release. Or stovetop: bring to boil, cover, lowest heat 20 min, rest 10 min.
