Cook 1 lb fettuccine 1 min less than package. Reserve 1 cup pasta water.

Season and cook 1.5 lb sliced chicken breast in 2 tablespoons olive oil over medium-high heat 5-6 min. Set aside.

In the same skillet, melt 4 tablespoons butter. Whisk in 3 tablespoons flour, cook 1 min.

Slowly whisk in 2 cups whole milk. Simmer 3-4 min until thickened.

Off heat, whisk in 1.5 cups grated Parmesan, ½ teaspoon nutmeg, salt, pepper.
