Instructions

    Make batter: whisk 1 cup chickpea flour (besan), 2 tablespoons rice flour, 1 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, ½ teaspoon turmeric, ½ teaspoon ajwain, 1 teaspoon salt. Add water gradually to make a thick pancake-batter consistency. Rest 10 minutes.
