Make batter: whisk 1 cup chickpea flour (besan), 2 tablespoons rice flour, 1 teaspoon red chili powder, 1 teaspoon cumin powder, 1 teaspoon coriander powder, ½ teaspoon turmeric, ½ teaspoon ajwain, 1 teaspoon salt. Add water gradually to make a thick pancake-batter consistency. Rest 10 minutes.

Cut 8 slices of white bread in half diagonally (triangles).

Optional filling between two bread pieces: mashed seasoned potato. Or use plain bread.

Heat 2 inches oil to 350°F.

Dip each bread piece in the batter, coating completely. Carefully add to hot oil.

Fry 2-3 minutes per side until deep golden brown and crispy. Drain on wire rack. Serve immediately with green chutney, tamarind chutney, or ketchup. Best with hot chai.
