Use 4 slices of sturdy bread (sourdough or country white). Butter the outside of each slice generously.

On the unbuttered inside of one slice, spread 1 teaspoon of Dijon mustard (or English mustard for stronger flavor).

Layer the bottom slice: 2 slices of sharp cheddar, 3-4 oz of thinly sliced cooked roast beef (or deli roast beef, folded into ribbons), 2 tablespoons of caramelized onions (or thinly sliced raw red onion), more cheddar.

Top with the second slice of bread, mustard-side down, buttered-side up.

If you have a sandwich press: press for 4-5 minutes until golden and cheese is fully melted. No press: cook in a skillet over medium-low heat, weight with another pan, cook 4 minutes per side.
