    Slice 2 lb beef sirloin or top round into thin steak-like pieces (¼ inch). Marinate overnight: ¼ cup olive oil, juice of 2 lemons, 1 cup yogurt, 4 minced garlic cloves, 2 tablespoons paprika, 2 teaspoons cumin, 2 teaspoons oregano, 1 teaspoon coriander, 2 teaspoons salt.

    Stack marinated beef pieces vertically on a baking sheet, skewered with 2 long metal skewers to hold the tower.

    Roast at 400°F for 45-60 minutes, basting every 15 minutes. Increase to 425°F for last 15 minutes.

    Rest 10 minutes. Shave thin strips with a sharp knife — the doner cutting technique.
